In the heart of Burgundy’s iconic Côte de Nuits lies Chambolle-Musigny, a village renowned for its exquisite wines, historic charm, and harmonious relationship with nature. Domaine Amiot-Servelle cultivates vines according to organic principles, weaving tradition, family passion, and ecological integrity into every bottle.
Chambolle-Musigny is one of those magical names that wine lovers revere. Protected from urban sprawl, the village has preserved its picturesque charm through the thoughtful restoration of historic buildings, which are clustered tightly together, leaving maximum space for prized vineyards.
But Chambolle-Musigny offers more than the world-famous Pinot Noir: it invites visitors to discover its rich heritage. From the stunning 16th-century church adorned with paintings dating back to 1539 to the iconic lime tree planted by Sully centuries ago and the elegant Sainte-Anne fountain from 1865—this village enchants at every turn.
Chambolle was once known as “Campus Ebulliens,” Latin for “boiling fields,” referencing the subterranean river Grosne, visibly churned during storms. It became “Cambola” in the early 12th century, and later, around 1500, it took the form “Chambolle” after receiving permission to build its own church.
By the late 19th century, Burgundy’s Grand Crus gained unprecedented acclaim. The village proudly adopted the name of its illustrious Grand Cru vineyard, “Musigny,” officially becoming Chambolle-Musigny in 1882.
In the 1920s, Clément Tachot planted the initial vines that became the seed of today’s domaine. His daughter, Cécile, and her husband, Jean Servelle, expanded this legacy in the 1950s under Domaine Servelle-Tachot.
Domaine Amiot-Servelle emerged in 1989 when Christian Amiot, from neighboring Morey-Saint-Denis, and his wife, Elisabeth Servelle, took the helm. Their three children—Prune, Violette, and Antoine—each bring their own paths and talents, with Prune, an accomplished oenologist, joining the domaine in 2011, cementing the family’s legacy.
Domaine Amiot-Servelle’s 7 hectares are perfectly positioned on Chambolle-Musigny’s famous slopes, renowned as Pinot Noir’s paradise. Here, soils rich in limestone and gravel create delicate, refined wines—described poetically as feminine for their elegance and subtlety.
In 2010, the domaine expanded, inheriting one hectare from Christian Amiot’s family in neighboring Morey-Saint-Denis (including a prestigious Clos Saint-Denis Grand Cru) and the renowned Charmes-Chambertin Grand Cru vineyard in Gevrey-Chambertin, further enriching their already stellar portfolio.
Pinot Noir dominates Amiot-Servelle’s vineyards, a grape perfectly suited to the local terroir, producing compact clusters of grapes prized for their elegance, vivid color, and long aging potential. However, the domaine notably cultivates a small parcel of Chardonnay, crafting exceptional white wines marked by complexity, richness, and depth.
Environmental responsibility guides every decision at Domaine Amiot-Servelle. Having practiced integrated pest management since Jean Servelle’s era, the family fully embraced organic viticulture in 2003 and achieved official organic certification in 2008.
Natural alternatives have entirely replaced chemical treatments. Compost enriches soils instead of synthetic fertilizers, fostering biodiversity. Regular plowing aerates the soil, encouraging deep root growth and enhancing the distinct expression of each terroir.
From careful pruning to meticulous leaf removal and green harvesting when necessary, every vineyard task prioritizes grape quality. The family rigorously controls yields to produce grapes bursting with concentrated flavor, maintaining a harmonious balance with nature.
To combat grape pests sustainably, Amiot-Servelle employs sexual confusion methods and avoids insecticides. Pheromone diffusers placed in spring effectively disrupt moth mating patterns, preserving vineyard health through ecological cooperation with neighboring growers.
Harvest dates are decided collectively after meticulous maturity analysis. Grapes are carefully handpicked and sorted first in the vineyard and then again at the winery to ensure impeccable fruit quality. Depending on vintage conditions, a proportion of whole clusters may be included in the fermentations.
The modernized cellar features stainless steel tanks offering precise temperature control, enhancing natural fermentations initiated without added yeasts or enzymes. Daily tastings guide traditional manual punch-downs and pump-overs, and careful monitoring is provided throughout fermentation.
After gentle pneumatic pressing, wine flows by gravity into premium French oak barrels (15%-50% new, depending on cuvée), aging gracefully for 16-18 months. Bottling decisions are made collaboratively after family tastings, ensuring wines are minimally filtered or entirely unfiltered to preserve maximum authenticity.
Domaine Amiot-Servelle wines reflect the intimate bond between the Amiot-Servelle family and their land. Each cuvée tells a story of tradition, meticulous craftsmanship, and unwavering respect for nature’s rhythms. They are quintessential expressions of Chambolle-Musigny’s finesse and complexity.
The Amiot-Servelle approach blends organic stewardship, rigorous quality standards, and generations of family knowledge from vine to bottle. Their wines celebrate Burgundy’s unique terroir and the vibrant spirit of those who nurture it, offering wine lovers timeless elegance and exceptional purity of expression.
